Once you start making your own granola, you’ll never go back to buying it! It’s so easy to make and customize, and your house smells HEAVENLY while it’s baking. This flavor combination was too perfect not to share – I hope you enjoy it!
Almond Maple Pecan Granola
- 3 cups old-fashioned oats
- 1 cups pecans, roughly chopped
- 1/2 cup pumpkin seeds
- 3 TBSP ground flaxseeds
- 1/3 cup creamy natural almond butter
- 1/2 cup maple syrup
- 1/4 cup coconut oil, melted
- 1 1/2 tsp ground cinnamon
- 3/4 tsp sea salt
- 1 tsp vanilla
Preheat oven to 325 degrees. In a large bowl, combine oats, pecans, pumpkin seeds, and flaxseeds. In a small bowl, combine almond butter, maple syrup, coconut oil, cinnamon, sea salt, and vanilla. Add wet ingredients to dry ingredients and mix well.
Line a large baking sheet pan with parchment paper. Spread granola evenly on the pan. Bake for 15 minutes, then either rotate the pan 180 degrees in the oven (if you like your granola clumpy), or stir the granola (if you don’t like as many clumps), and return to cook for 10-15 minutes more, watching it closely so it doesn’t burn.
Allow to cool completely without stirring. Store in an airtight container.
