This beautiful, smooth, light and doughy recipe was a glorious collaboration with my friend Chelsea Young for a women’s yoga and food retreat.  When I first took a bite, I couldn’t believe how delicious they were.  They would make a great holiday gift for friends and neighbors, or a Thin Mint-like treat all year long.

Chocolate Peppermint Truffles

  • 1 cup raw walnuts
  • 1 cup raw pecans
  • 1/2 tsp vanilla
  • 8 dates
  • 2 tbsp hemp seeds
  • 1 tbsp chia seeds
  • 2 tbsp raw cacao powder
  • 1 tbsp coconut oil
  • 1/2 tsp salt
  • 1 tsp peppermint extract
  • 1/4 cup dark chocolate chips


Add all ingredients except for chocolate chips to a food processor, and process until doughy and mostly smooth.  Add chocolate chips and pulse a few times until well-incorporated and slightly chopped.  Using hand, roll into small balls.  Let chill in fridge or freezer before enjoying.  Store in an airtight container in the fridge.
