Well, it turns out Kermit the Frog is SO wrong – it IS easy being green. This Buddha bowl is full of green goodness, it’s easy to throw together, and it is SO easy to love. The different textures in this Buddha bowl work perfectly together- the fluffly quinoa, softened kale, crisp spiralized zucchini and roasted broccoli, and smooth creamy avocado…this is the stuff green dreams are made of. And then the pesto…it’s bursting with the best flavor, and it really pulls this incredibly nutritious bowl together. Speaking of nutrition, I could go through the list and tell you all the great things going on in this bowl, but it would take forever, because literally every ingredient will do your body good. As if the taste and nutrition weren’t enough, it’s a great thing to prep ahead on Sunday for your weekday lunches. So go ahead, take one bite, and tell me – is it easy being green?
Green Goodness Buddha Bowl
- 4-6 cups of kale, de-ribbed, washed, and chopped
- 1 medium zucchini
- 1 cup of quinoa, cooked according to package directions
- 3 cups of raw broccoli florets
- 1 TBSP olive oil
- 1 avocado, diced
- 1 tsp of apple cider vinegar
- 1/4 tsp of sea salt
- hemp hearts and pumpkin seeds (optional, for garnish)
For the pesto:
- 2 cups of baby spinach
- 1 cup of basil
- 2 cloves of garlic
- Juice of 1 lemon
- 1/3 cup of olive oil
- 3/4 cup of walnuts
- 1/2 tsp of salt
Preheat the oven to 400 degrees. On the stovetop, cook the quinoa according the the package directions. Next, toss broccoli with olive oil and spread on a baking sheet. Bake for approximately 20 minutes, until the edges start to brown. Next, add chopped kale, apple cider vinegar, and 1/4 tsp of sea salt to a bowl, and use your fingers to massage the kale. Do this for a few minutes until the kale softens and decreases in volume. Spiralize your zucchini into thin noodles.
To make the pesto, add all ingredients into a blender or food processor and process until smooth. You may have extra pesto – it freezes well if you don’t want to use it right away!
To assemble, fill your bowl with quinoa, kale, raw zucchini noodles, roasted broccoli, and diced avocado. Add a generous dollop of pesto and sprinkle with hemp hearts and pumpkin seeds, if desired.
