This meal is everything summer dinners should be – quick, simple, flavorful, and satisfying.  It’s easy enough to whip up for a weeknight dinner, and delicious enough to serve at a dinner party al fresco.  I recommend grabbing some locally made sausage to be the star of the show.

Grilled Sausage over Marinated Beans and Sautéed Greens

  • 1 can white beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 TBSP red wine vinegar
  • 2 TBSP olive oil, divided
  • 2 tsp herbs de provence (or Italian seasoning)
  • 1/2 tsp salt and pepper
  • 6-8 cups baby spinach
  • 1 lb. large sausage links (pork, chicken, spicy, mild, etc – your choice!)


In a medium bowl, mix beans, tomatoes, red wine vinegar, 1 TBSP olive oil, herbs de Provence, and salt and pepper.  Cover and refrigerate at least one hour (or overnight).

Heat grill to medium.  Grill sausages until they are cooked through, about 10-15 minutes.  While the sausages are grilling, heat a large skillet over the stove to medium heat and add 1 TBSP olive oil.  Add spinach, and saute until wilted, about 4-6 minutes.  Toss beans and tomatoes with spinach until warmed through, and remove from heat.

Cut the sausages in half and serve over the beans and greens.
