What a no brainer to make jello!  It’s such a delightful treat for kids, and it is SO easy to make at home.  The stuff you buy from the store has ZERO nutritional benefits, but my jello packs some serious health benefits.  First, the pomegranate juice is loaded with anti-oxidants (and it was our favorite fruit juice flavor we tried).  Gelatin is incredibly healing for the gut, and may even help heal leaky gut.  And it’s so easy to incorporate a dose of probiotics to populate that healing gut with beneficial bacteria.  It’s a treat for the tastebuds, and a treat for the belly!

Gut Healing Pomegranate Jello

Ingredients

  • 2 cups pomegranate juice
  • 2-4 TBSP grass-fed gelatin
  • 4 servings of probiotics (I use Garden of Life children’s; you could also use adult probiotic capsules)

Directions

For jello cups: In a small mixing bowl, quickly whisk together 1/4 cup of cold or room temperature pomegranate juice with 2 TBSP gelatin.  Heat the remaining 1 3/4 cups of pomegranate juice until hot, and add to mixture, whisking until well blended.  Add in probiotics, and pour into 4 small bowls.  Chill in refrigerator at least 1 hour before serving.

For jello squares: In a small mixing bowl, quickly whisk together 1/4 cup of cold or room temperature pomegranate juice with 4 TBSP gelatin.  Heat the remaining 1 3/4 cups of pomegranate juice until hot, and add to mixture, whisking until well blended.  Add in probiotics, and pour into an 8×8 inch casserole dish.  Chill at least 3 hours before cutting into squares.
