It seems that everyone has their own version of an energy ball, and, well, here is mine! It’s a mixed-up love child of all of the different energy balls I have tried and includes 3 of my favorite things in life – oats, chocolate, and peanut butter. They are healthy enough to be an energy-boosting snack, and delicious enough to be dessert!
Oatmeal Chocolate Chip Energy Balls
- 1 cup rolled oats
- 1/2 cup natural peanut butter
- 1/3 cup raw honey
- 1/2 cup flax seeds
- 1/3 cup raw pumpkin seeds
- 1 TBSP chia seeds
- 1/2 cup dark chocolate chips
- 1 tsp vanilla
Mix all ingredients. Wetting hands as you go to prevent sticking, roll into balls. Store in an airtight container in the fridge for up to a week.
