Sprouted Sunny Green Salad

  • 3 cups kale, deribbed and chopped
  • 1/2 ripe avocado, mashed
  • Juice of 1/2 lime
  • 1/3 cup sunflower sprouts
  • 1/4 cup raw sunflower seeds
  • Pinch of sea salt


Place washed and chopped kale in a medium bowl.  Add the mashed avocado, and, using hands, massage it into the kale for about a minute, until the kale is well-coated and softened (this will be messy!).  Squeeze fresh lime juice over the salad and top with sprouts, sunflower seeds, and salt.
