When you have a recipe that you love, but you think it’s too simple to share, well, that’s EXACTLY the recipe you need to share!  This salad is incredibly simple – the sweet crunch of apples, the tangy lemon vinaigrette, and the massaged kale make for a perfect salad.  Dishes don’t need to be complicated, and most of my favorite things to eat have the fewest ingredients.  It pairs perfectly with my Creamy Butternut Squash Soup!

Sweet Crunchy Kale Salad

  • Servings: 4

Ingredients

  • 1 bunch of kale, de-ribbed and chopped into bite-size pieces
  • 1 apple (recommend Gala), cut into thin matchsticks
  • 1/2 cup shredded carrots
  • 4 TBSP + 1 tsp olive oil, divided
  • Juice of 1 lemon
  • 1 TBSP dijon mustard
  • Salt and pepper, to taste

Directions

Place kale in a medium bowl and drizzle with 1 tsp olive oil.  Using your fingers, massage kale for about a minute, until it softens and turns a brighter green.  Add apples and carrots.

For the dressing, whisk or blend 4 TBSP olive oil, lemon juice, and dijon mustard, and season with salt and pepper.  Drizzle over salad and toss before serving.
