Eating plant-based meals does not have to be bland or difficult. This recipe can be made in about 30 minutes and with just 6 ingredients.  And it’s full of flavors the whole family will love!

Sweet Potato Coconut Curry

Ingredients

  • 2 large sweet potatoes
  • 1 small red pepper
  • 1/2 sweet onion
  • 1 can full-fat coconut milk
  • 1-2 tbsp red curry paste
  • 3/4 cup cashews, chopped
  • 1 tbsp olive oil
  • Salt and pepper
  • Rice for serving (optional)
  • Cilantro (optional, for garnishing)

Directions

Prepare rice according to package instructions (if using).  Cut vegetables into bite-sized chunks.  Heat pan to medium heat and add olive oil.  Saute onion and bell pepper until starting to soften, about 5 minutes.  Add sweet potatoes, coconut milk, and red curry paste.  Mix well, cover, and cook on low until sweet potatoes are tender, about 15-20 minutes.  Serve over rice and top with a generous handful of cashews and cilantro.
